Ingredients

  • 150 grams Boer'n Trots Cow
  • 125 grams of bacon bits
  • 2 tablespoons almonds
  • 1 cucumber
  • 1 bag of lamb's lettuce
  • 1 bag of arugula
  • 50 grams of sun-dried tomatoes, cut into thin strips
  • 8 dates, quartered
  • 2 tbsp Date Balsamic Cheese Dip
  • 2 tablespoons olive oil
  • lemon juice
  • Fresh thyme leaves

Date Balsamic Salad

Preheat the oven to 180 degrees. Line a baking sheet with parchment paper. Grate the Boer'n Trots Cow's cheese. Make about 12 small mounds from the grated cheese. Bake these for 7-10 minutes in the preheated oven and let them cool outside the oven. The cheese wafers are ready. Fry the bacon pieces in a pan until cooked through. Toast the almonds in a dry pan. Slice the cucumber into thin strips using a cheese slicer. Toss the lettuce together and add the sun-dried tomatoes, almonds, dates, and cucumber.

Make a dressing from the date balsamic vinegar, oil, and lemon juice cheese dip by mixing them well, then toss this through the salad. Finally, place the bacon bits and cheese wafers on the salad and sprinkle the thyme over it.
