Ingredients

  • 50 g Farmer's Pride Mushroom
  • 1 large butternut squash (approx. 600 g)
  • 1 red onion, cut into wedges
  • 6 tablespoons olive oil
  • 1 bunch of fresh sage
  • 1 courgette, sliced
  • 1 tbsp balsamic vinegar
  • Salt and pepper

Oven-roasted autumn vegetables with Boer'n Trots

Preheat the oven to 180 degrees Celsius.

With a sharp knife, cut the pumpkin in half and remove the seeds. Peel off the skin and cut it into cubes.

Take a large baking sheet and spread the pumpkin, zucchini, and red onion over it. Make sure they are not lying on top of each other but have enough space to roast. Drizzle plenty of olive oil over them and stir well. Remove the sage leaves from the stems and chop them coarsely. You should have about 2 tablespoons. Distribute this over the vegetables and sprinkle with salt and pepper.

Roast the vegetables for about 30 minutes and stir everything
turned around halfway through.

Remove the baking sheet from the oven, drizzle the vegetables with the balsamic vinegar, and stir briefly. Distribute the cheese over the top and lightly stir it through the vegetables so that the cheese
Melt it a little before serving.
