Thanks to the red bacteria, the cheese has a delicious, tangy flavor. The rind puts some people off, but true blue cheese lovers would rather see nothing on their cheese board than a real Italian red mold cheese. The blue on the cheese comes from blue veins and is therefore not ordinary mold.
